Some schools subscribe to the LSAC Deposit Overlap service where the school gets a list of those who deposited somewhere else.

You are never required to withdraw from a waitlist school (or a school that has not rendered a decision).

I wondered the same about a month ago. There's this thing called an overlap report that is available to all the law schools. This report automatically tells schools if you double deposit, and oddly enough schools can also find out if you have paid a seat deposit. Schools that you haven't even applied to have access to the info. Schools that have wait listed you can see if you placed a deposit elsewhere.

About schools requiring you to withdraw from wait lists - they cannot do that. LSAC has a rule against it. I'd link, but I'm on my phone.

to be fair, it does say:
"No attempt has been made to develop legislative
guidelines, because no absolute rules apply to every situation. The
statement provides recommendations to improve the admission
and financial aid processes in law schools and to promote the
highest standards of professional conduct for all participants"
not sure how enforceable these "rules" are
