Yes.
There are two types of deferrals, binding and nonbinding. If it is binding then you don't have to matriculate, but you are not allowed to attend another law school that year. If it is nonbinding then you can attend another law school or not matriculate to any school, whatever you desire.

If you are asking them after you already have an acceptance there is no guarantee they will allow you to defer. On top of that, it may be either binding or non-binding depending on what they offer. I am not sure if they offer you a binding deferral if you can haggle to have it be non-binding.
