After Judicial Clerkship

in considering law schools, people look to percentage breakdowns between private practice, business, government, public interest, and judicial clerkships.
from what i know clerkships are extremely prestigious and getting one is extremely difficult. my question is: what do people usually do after a clerkship?
do they go into private practice? do they pretty much get to pick whatever they want? is it very dependent on school? why do people want it (just for prestige?)?
this is more out of curiosity. i should probably assume that i won't get a JC
