If I am slightly above one median and slightly below another... how should I be gauging my chances at the school?

I would say target, but I think it also depends which median and how much slightly below is. (Is slightly below 1 LSAT point vs. 2 LSAT points, .05 GPA or .2 GPA, etc.)

Also, I don't even know the medians of any of the schools I've applied to. Why would it matter when you can just go to lawschoolnumbers.com? That tells you much more about how decisions are made than the medians will.

i'm hesitant to consider the school a target due to not being above the LSAT median (to me it seems that being above the LSAT median is 'stronger'

Eh....I think it would differ by school. I also think there's a big difference between 1 LSAT point and 2 LSAT points. You could gather whether GPA vs. LSAT would be more beneficial by looking at LSN.
