If the binding statement is in an effort to curb yield protection, then it may be of some use (although there are lots of different ways to word it). However, I'm still not sure you completely understand the concept of ED from the school's perspective.
You CAN'T create a binding aspect to your application. The school does this by allowing students to apply ED. If you don't apply ED, all the school has to go on is "your word" which means next to nothing. They have ED for a reason. So if it is a reach school you are applying to and telling them you will attend no matter what, it really doesn't mean anything to the school that you said that. I'm pretty sure they can't do anything about it if you decide to attend elsewhere, other than have some really sour grapes. If you applied ED, though, and they accept you, then you HAVE to attend.
