According the the admission prediction websites, my chances are good, but I really have no softs and didn't submit any LORs, whereas I assume most splitters submit the LORs. Am I riding the fence here?

If you could get some interest soft (job/volunteer/etc) and some letter writers...I feel like you might make a compelling case to get in somewhere better.
Heck, go get an MS in molecular bio, do well enough in grades, and get to know 2-3 professors really well. With that, you could write an addendum and say "although you don't consider graduate GPA, my performance in an intensive graduate program demonstrates my academic potential".
Also, you could specialize in an area where you could easily do patent litigation after law school.
