They received my app Jan. 3. I'm in for long wait, alas.
Forgive a basic question: Can anyone provide insight on what U-Chi likes most?...For example, Northwestern like WE and LSAT splitters, Berkeley likes high GPAs and softs, UVA will let you in ED if you have a 3.9/164+.
Anything similar for Chicago?

Chicago is generally kind to high-LSAT splitters. It's also been hypothesized that they favor candidates who would be a good fit for Chicago's intellectual atmosphere.

my UR date also just changed to 1/12. Does this have any meaning / historical precedent? I really doubt I am going to be getting into chicago hahaahha.

I bet you have a decent shot at U-Chi, too. That GPA is nice and shiny and you obviously have a good app package, to get into three T-10 schools already.
