Employers care about your GPA/class rank, the school's U.S. News ranking, and local reputation. They couldn't care less where SLU is ranked for Health Law.
If you want to practice in St. Louis, go to SLU or Mizzou (whichever is cheaper). If you want to practice outside of Missouri, go to school in the state you do want to live in.
SLU is a great school, but the Health Law program is nothing to base your decision on.

What I've heard about health law by talking to (SLU) students and attorneys is that most employers who could be considered in the "health law" field prefer to hire experienced attorneys over new grads. Backgrounds and experience in health-related fields also help considerably in hiring. The health law rankings themselves don't seem to matter, though taking relevant coursework can help.
Sorry if I'm sorta vague on this issue. Health law isn't a big interest of mine, so most of what I know has just come up through the course of everyday conversation, or conversations about SLU/the St. Louis market in general. Though FWIW, the one attorney I spoke with who is actually practicing health law (working in-house at a hospital I work at) graduated from SLU Law and enjoyed her experience there.
Communicate now with those who not only know what a legal education is, but can offer you worthy advice and commentary as you complete the three most educational, yet challenging years of your law related post graduate life.

Thanks for the info, I had an interest in health law prior to applying to St. Louis and thought it was going to be a great opportunity to go to a #1 ranked program, although being from Canada and not understanding the US ranking system I guess you could say I was naive. I was not interested in practicing law in Missouri post-law school anyways. All in all if the ranking doesn't matter in the practical world that makes my decision much easier. Now to decide between Wake Forest or Ontario...

Yeah, it's generally a good idea to disregard specialty rankings when choosing a law school. And if you don't want to practice in STL/Missouri/Southern Illinois, then SLU would be a very poor decision.
