True, I forgot about cookie butter, it's pretty great. Breakfast for dinner is the best. Two eggs sunny side up, couple of strips of bacon, some breakfast sausage, sweet potato hash and coconut flour pancakes topped with some awesome Vermont maple syrup.

This is the one I use and I've gotten good results. Obviously they're not the same as traditional pancakes, but I don't want the grain that comes with them.justabitunusual wrote:yum!! One thing I don't like about coconut flour is that it absorbs so much liquid, it's like a sponge!
ETA- I'm not a huge fan of coconut stuff in general unless it's a piña colada, so I usually have to pair it with a strong flavor like mint, chocolate, or lemon/lime
