Yeah lamb is the best! They eat tons of lamb in Turkey. I've never had lamb with sage browned butter sauce but that sounds delicious.

You know what one of my favorite foods are? PIE! I've never had a lamb pot pie so I'm thinking I should really make one. Seattle restaurants love to mix things up but I've never seen a single place that made pot pies using any meat other than chicken or beef or fish. I make really good pot pie - the key is to always make your own crust. So much better than any store bought crust. I'm thinking I should do pie experiments using different meats and less traditional pot pie seasonings.

My pie crust recipe:
3 cups all-purpose flour
1 1/2 cups (3 sticks) cold salted butter
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar

I find that if it isn't enough water as you mix then you just add a little more. The key to making any good crust if people don't know is cold butter and cold water and not overworking the dough. I usually cut up the butter and then put it back in the fridge before I start mixing. I also put an ice cube or two in the water bowl then I measure out the water as I mix.

Yeah elk and bison are some of my favorite meats as well. I also love duck and lamb. Also Salmon - but I'm always confused whether people consider that a meat or not. I think it depends on who you ask.

Guys I went to the butcher I found online. It was like a candy store for meat. Spent $80. Not sure if I should celebrate my meat or lament my wallet.

It's really not that hard. It's a lot like making anything else with flour. The only thing that you need to make sure of is that you get it cold before you roll it. I mean, I've don'e it without doing so, but it's a TON easier if its cold.

Personally I recommend a nice marble roller too, but that's optional.

Good meat makes a great meal. Best thing to put on a steak once it's on the plate in front of you -- nothing. It can be rubbed, seasoned, or flavored before or while it's cooked, smothered with onions (Pearl onions), mushrooms. A-1 is just a bottle of sad

+1. Also a good sturdy pastry blender really helps- I recommend Oxo's, which is pretty cheap too. Way easier to cut the butter into the flour and actually get the pea-sized chunks you're supposed to.
