I intentionally didn't drink any water day of, so I didn't have to piss during the exam. During break is pissed 2 ounces of dark brown piss.

Drink the normal amount of fluids you usually do in the morning and don't drink much at all starting an hour or so before your last chance to use a bathroom, kinda like how you time things when getting ready for a long road trip. Easy and simple as that.
As long as you don't break out sweating profusely like an ice cube on hot pavement during the test your hydration will be fine for the 3-4 hours without any more water.
If fear of test day bladder management problems is going to be an issue for you or if you haven't yet mastered big kids potty skills, get a pair of depends so you can take the test free of need to pee fears or discomfort. Then, if you suddenly gotta go, just go while still working away on the section without missing a beat.

How are you going to lose hydration during the test if you are decently hydrated going in? Where is the moisture going to go during those 3-4 hours to make your hydration go down? I can understand, because I've been through the LSAT a few times, but please try to remember, it's a 4 hour 100 question multiple choice test. It doesn't require dieting, water intake modification, or the most calorie efficient snack. The reality is you will spend your break trying to figure out what your experimental was, not chugging water, popping Ginko, or gorging yourself on bananas. My first admin I brought a power bar, took a bite and said "What am I doing!? I'm not even hungry, and this thing tastes like shit". It is against your best interests to not get so hung up on the details, you are setting yourself up for more stress than it needs to be, and that stress helps a lot of people choke.

Drink GATORADE. Scientific fact: every time you make a decision, such as deciding on an answer to an LSAT question, your brain burns glucose. You must replenish your glucose levels in order to continue efficiently making decisions. Gatorade (or Powerade) contains glucose in a form that will quickly enter your blood stream and travel to your brain.

Drink all the water you want (probably chug it) until perhaps 18 hours before the test (or right before you go to bed the night before). That will deal with your hydration.
The day of the test, perhaps limit yourself to 8oz every hour, maybe less, leading up to the test. I myself will probably switch to gum two or three hours beforehand.
This is also speculation. I'm not a doctor.

You should go with the Depend Adult Undergarment. Also if you're into that whole healthy eating=healthy mind thing, try to stay away from junky foods like Whoppers and Perdue Wonderchickens for at least a few days before The Test.

While were at it with this topic, might as well leave no stone unturned for the ultra obsessives. To really play it safe, ingest a decent amount of salt before the test since it helps make your body retain fluids. Not too much salt though since it can jack up your blood pressure.
