considered an URM

I wasnt sure if URM, was specifically if you were latino or african american or if it can also include: If you have a father that is caucasian and a mother that is of middle eastern descent? or is that not URM?

Nope, not URM at all. Mexican, African American, Puerto Rican, and Native American only.

Btw, Middle Eastern is Caucasian.

Yeah you don't get a boost for this. You may try writing a diversity statement (but i wouldn't expect to get any benefit from it)
