Is it kosher to turn down interviews?
Alternatively, is it kosher to schedule interviews somewhat far out?

Yeah, it's fine to do both. But if you schedule it far out, there's always the risk that the judge will hire somebody before he or she gets to you. Some judges wait until after everybody interviews; others will hire as they go. Also, you'll have to work within the scheduling parameters the judge gives you.
