If you are set on reading supplements over break (some people will say it's a bad idea, but as a 3L, I'm now convinced that advice is wrong), I would definitely read the CivPro E&E, and I would start to read Understanding Property Law.
I recommend CivPro because that class will confuse you more than the other classes, and the E&E is solid.
The thing with property is that it's such a huge body of law, that your professor will necessarily not teach portions that you will read in Understanding Property Law. For that reason, some of your time reading that supplement will be wasted. If you know which professor you are taking, find an outline of that professor's class. Only read the portions of the supplement that correspond to things you'll actually be taught.
If you have time, feel free to look at the crim E&E, but I think that class is the easiest of the three (but see what other ppl have to say).

Jesus Christ don't read shit. You do not have to work in the off-season to do well in law school. You just got done with finals. Decompress for a few weeks, see friends and family, drink and party, sleep in and do nothing for days on end. And once you get back to school, then its back to work. You've earned some R&R, take advantage. You will never in your life after law school have fricken three weeks off. Soak it up.
Like the poster above sort of noted - you don't know what your professor will want to focus on. Go in as a blank slate and absorb then.

seconded, i wish I read supplements before 1L. definetely read the understanding crim supplement, its amazing and you will have a thorough understanding of the subject, meaning you can devote more time to (arguably) harder subjects like property and civ pro. Freer's civ pro hornbook is great too.
