Having done preliminary research at the .gov sites, it seems as though it's possible. Anyone know more about this?

No. Both exams are given on Tuesday/Wednesday. If you want to take NY plus another jurisdiction, you need to find a Wednesday/Thursday state (NJ and Mass come to mind).
