In my experience paper classes are easier than exam classes. Also, anything with the words "animal," "sustainability," "fundamental," "ethics," "biomedical," "literature," "and the law," seem to be easy classes.

Evidence - E&E / Advisory Committee Notes
Admin Law - Inside Admin Law by Beermann

Used those, received good grades.

OP, don't take those if you're looking for "easy" classes. Take stuff like Entertainment Law.
