Give them the heads up as possible. If they dont staff someone when they have warning, thats on them

If they are so tightly staffed, and 2-3 weeks notice won't help, they should have had you on an employment contract rather than at will. lawyers change jobs, it's not an unknown phenomenon, they fucked up.
