Under K&E's hiring criteria, it says they "value individuals from diverse social, economic, cultural and personal backgrounds." I'm not sure what that means, but should I mention being a first generation college student that grew up on a farm? It seems like a weird thing to bring up.

I was thinking of using my background to talk about drive and competitiveness and all that.

I would suggest that you concentrate of how to emphasize your strengths and rely less on grasping at straws with that "po' boy from the farm" act. It might make you look desperate and seeming like you feel entitled to a break b/c of a sob story. However, it might help if you could disguise yourself as an NativeAmerican girl, though.

Seeking advice re: cancelling interviews. I just secured an offer in my target market at a firm that I could definitely see myself at. I'm also expecting a second offer from my 1L firm in the same market. I bid on a few firms outside my target market either as a back-up or because the firm is a heavy-weight in IP.
A few of these firms I have no interest in interviewing with anymore, and I would never go to over the offer that I just got or the other offer I am expecting due to geographical preferences. At this late stage, is it worth it to just suck it up and do the interviews, or should I cancel and save everyone the time?

Has anyones alternate numbers changed? Wasn't sure if that happens or not as people get shifted around

Alternate lists/status may have shifted without a change on Symplicity.
