quitting after a week or two?

I'm in a situation where I ended a job and had a period where I was interviewing at a bunch of places, but none seemed like they were going to act so I accepted an offer and started working at a government agency that I enjoy a lot at the moment but definitely do not see myself working there more than 2 years or so because the salary is quite low and opportunities for advancement seem fairly limited. I've only been here about a week or so and of course now I hear from one of the other places that I interviewed at before asking me to come in for a callback. I'm thinking of doing it because I think the pay would be significantly better even if the substantive experience I might get there would be less than where I am now.

If I were to get the offer, how crazy would it be to leave a job after only like 2 weeks? Do people ever do this? I am sure I would be burning a bridge with my current place but I doubt I would ever try to come back in the future, so that doesn't seem like too much of a concern. Would be interested to hear thoughts or to hear from anyone who has done or considered this.

OP, yeah for sure I wouldn't put it on my resume. The position is civil lit assistant in my state's AG office. In some states I get the impression that that is a relatively prestigious job and can lead to advancement either in the office or opportunities on the outside, but I get the sense here that people are pretty stagnant. Most people either came from really small firms making probably less or equal to what they make here or are lifers. I said limited advancement because I just sense the office is not as well respected here and salaries tend to remain the same even after many years of working here. Section chiefs are making anywhere between 75 to 90, with most being towards the lower end of that, and the prospect of making section chief is probably quite doable because there is a lot of incompetence here but still would not happen for several years is my guess.
