I honestly don't know what the general wisdom is. I think some firms do everything all at once and others seem to do people in batches.
TITCR. At our firm, it's up to the interviewing partners/associates to call when they can (ASAP, but that can be the same evening, the next day, or within a few days).
To answer the original posters question, however . . . I do believe that individual interviewers generally call back all at once. While interviewers within the firm may call back people over the course of several days, this very likely isn't the case for individual interviewers.
I don't think this is a safe assumption, as it could depend on the interviewer's schedule. I called one person a few hours before I called everyone else on my list. Not because the person was more special than the others on my list, but just because that's how my timing worked out that night. I could see some partners making calls here and there over the course of a day or so if that's what was easiest for them.
