How hard would it be to make time to see an SO who lives about 2.5 hours away? I imagine you have to work Saturdays and could not really make it out to where she is until Saturday evening at the earliest, right? Is there anyone who has any personal exp. to share on this matter? Is there any chance of seeing each other more than just once a week?

depending on the SO's work situation, maybe he/she can make the drive out to you and stay there a night or two?

Are you talking as an SA or associate? If the former then you should have plenty of time. If the latter you're jumping the gun by quite a bit as a 1L.

I don't think they are jumping the gun; it's good to think about this in advance. Ergo, break up and find someone new. Especially in NYC, there's going to be some better/hotter version of your significant other.

It will be very difficult. My sibling works biglaw and lives with their SO, and they still never see each other...

Anon above. It's not easy, but it's doable. Don't want to go into too much detail. But she's understanding and willing to go the distance. Without that, it doesn't work.
