Is there a consensus on whether or not midwestern or southern firms expect thank you notes due to the culture?

Be safe. Spend a few bucks to get some decent paper, and spend fifteen minutes writing notes for each firm. I disagree: I think standard TLS wisdom is no notes and, if any, send them through email so they get there faster.
I suggest writing one to the recruiter, one to your on campus interviewer who made the CB invite, and one to the hiring partner if you met them on your visit.
