Nah. When we get there I leave (though this rarely happens). It's more like I'll ask good canned questions, but not know the correct route to go after I get a response.

maybe you just need to plan your dialogue a few steps further.
a canned question gets a canned response. you likely already know more or less what the answer will be. at the very least, you know that there is a range of responses within which the interviewer's answer will probably fall. why not plan out how you'll respond to the interviewer's answer to your question?

It's fine. Most likely, it won't make a difference either way in terms of an offer. Firms are use to hearing this (both sincerely and insincerely).

Even when you get an offer and you then choose not to take it, it probably doesn't make a difference (so long as you don't accept the offer and then renege).

That being said, personally, I would want to back it up if I said it was my first choice. The legal community is small and you don't want to be perceived as someone who says whatever is necessary to get a job.

That's what I'm planning to do. It's not usually that easy because I don't ask straightforward canned questions; I usually have a twist that brings out something I didn't know about the firm. Reacting on the fly to the new information in a way that sells them on me/my interest is where I'm messing up. But I think I could probably work harder at it. With only 2 CBS to go, for sure there's not much else I'm interested in at this point.

The hold pile --> callback phenomenon that careers services tried to sell me on is apparently not a myth.

Katten NY callback today. Went from 3 to 6 callbacks in the last 24 hours (all NYC). There is hope!
