Has anyone gotten dings from Latham (J.H.), Paul Hastings (E.L.), Dewey (M.B.), or DPW (J.M.)? Should I assume I'm out of the running at those places?
i wouldn't assume you're out of the running until you actually have the rejection in hand, BUT i have heard of a few Latham rejections going out via snail mail. It depends on what office you applied for, as it seems different offices have been sending them out at different times (for example, i now that LA and DC Latham rejections have been sent out via snail mail; not sure about NY or Chicago though).
Got a Latham Chicago ding via snail mail and a CB last week for Paul Hastings E.L.
Was the Paul Hastings CB for NYC?
Chicago

Do interviewer initials even matter? Or is it really the case that one set of interviewers will process their CBs and dings while another set of interviewers (from the same office) are on a different timetable?

I think it depends on the firm, but from talking to people, some CB's and dings from the same firm went out on different days depending on the interviewer.

I think it depends a lot on how much discretion the firm leaves the interviewers. If there is wide discretion, the CBs/dings can arrive interview-by-interviewer. If there is narrow discretion, often the CBs/dings (or at least the first wave) should arrive at the same time. It's actually interesting. A little bit of an inside look on firm dynamics. I've also seen the attorney/partner interviewer composition make a difference (in this case, it might be mixed discretion, where the partner has a lot of say in who gets CBs and the associate interviewer doesn't).

Out of curiosity, how many callbacks do you all have? (and stats if possible)

Me: 7 callbacks...all DC (silence from a few), 3.5, LR
