I'd use it as an excuse to "update" the schools later and simultaneously reaffirm your interest in them. It's too soon now, wait a bit.

Alsom I don't know who told you "it looks good to work at a law firm", but that's not quite true. It's really just a talking point and doesn't really help or do anything to benefit your resume. The benefit of a law job is really more of seeing what an attorney actually does and ensuring that's what you want to commit your life to.

You don't necessarily need to say that you're leaving in 6 weeks. Send the resume a week or two before you leave, and list the dates as "X/X/2017-present."

I feel if it is relevant work experience I don't see why you shouldn't or couldn't do so.
