Letter of rec confusion

Letter of rec confusion

I'm applying for Fall 2014, and one of my letter writers just told me something came up and she won't be able to get it in until late January. At this point, I don't think I'd be able to find anyone else to write one before then (I currently have 1 academic and 1 professional, but I know academic is preferred). Should I submit my app now and update it later? Or wait until everything is in? Do schools count the date of submission as the day you submit your portion, or the day everything is received? Thanks!

Submit now. Use that third letter in case you get waitlisted.
