i have logged into an online status checker for one of the law schools that I applied and the Status has changed from "in review" to "in committee".
what exactly is the difference between the two, do all applications move from in review to in committee?
(Applications Advice, Letters of Recommendation . . . )

There aren't any universal rules about this kind of stuff. Every school conducts the process differently and utilizes status checkers differently.
