I know it's more of a case-by-case thing, but in general, how often do deferments get approved? Does scholarship $ ever carry over?

It depends on the school and sometimes scholarship money carries over, but not always.

Otherwise, some schools want a good reason and others don't care; they just require a seat deposit. Some schools will make you basically ED. Schollies are sometimes carried over, but not always.
