Center = place where scholars study a particular area of law (they often hold conferences/sponsor lectures/visiting fellows).

Clinic = place where students, under supervision of faculty, practice law in a particular area.

So a Death Penalty Center (which would never be named that, but oh well) would be a place for people to study the DP as an academic subject/general phenomenon, and give talks and publish papers. A Death Penalty Clinic would be a place where faculty guide students in working on specific defendants' death penalty appeals.

IME centers at law schools are much more for faculty than students, and clinics vice versa.
