It usually just means they've gone back to edit the content out of a post (they decided it was too revealing or they changed their mind). You can always go back and edit the content of a post. If your post is the last post in a thread, you can delete the post entirely, but if someone has already posted after you, you can't.

Why do people post their GPA with an X in the hundredths place? Is it because they worry that including the full GPA will out them?

Yep...3.8X gives you a slightly higher degree of anonymity than say, 3.88 (especially since people are usually generous enough to give their exact LSAT score).
