If a super-reach school accepts me before my ED school does (while my application is still under review at the ED school), is it allowed and/or ethical to withdraw my application for the ED school while it's still under review (or change the status or RD while file is under review)?
Not a big deal. I like both schools. Just didn't expect to be accepted to the super-reach by any means.

Be sure that you'll prefer the non-ED school and then have your ED removed rather quickly (before you're accepted and it becomes binding)

I think I saw a long conversation on here about this subject a few days ago... technically your ED application is binding when you submit it, meaning you're committing yourself to attending that school if they accept you no matter what. In practice though it seems unlikely any school would hold you it if you ask to be released before they come to a decision, and I've heard of more than one case where applicants were released without a problem. Doesn't make sense to force someone to come to your school if they don't want to be there. Congrats on getting into your reach school
