well, i got jury duty my freshman year when i was at georgia tech, and i showed up for it on the first day. when they got to me in the roll call, i said i was a full-time student, and they let me off. didn't have to defer. they didn't ask for proof or anything.
this time, i wrote in with an excuse (and a copy of my transcript and such), and got deferred.

You should arrive at the courthouse wearing a wedding dress. Make sure to rub feces over your face for good measure too. That should make you appear mad enough to be relieved of jury duty.

I got a jury duty notice while in UG and just told them I was at school and they said I was off to hook...no deferment or anything

I've had them come to my parents house a couple of times during UG. I just had them check the box that I don't live there, send it back and it isn't an issue. You could also try sounding incredibly biased about the case if you do get as far as selection.

-No, I don't believe that anyone is innocent until proven guilty. The defendant is here for a reason.
-A preponderance of the evidence is too small a margin to decide a case on.

I just asked for a deferment until November. Will my summons get deferred again when I'm back in school?

Why would you want to get out of it. You'll never get to serve on a jury once you start law school. This could be your only chance!
