How necessary are internships (law or non-law related) during the admissions process? Will a resume with no work experience and just heavy community service be worse than getting a few internships in before graduation?

They are called "softs" on this board and in most admissions processes. You want to make sure your softs are at least on par with the average applicant which means: work experience, community service, leadership positions, academic awards (just as a starting point, but you could add languages and study abroad as common softs)

You don't want to have any holes in your app, and lack of w/e could be perceived as a hole by an admissions committee.

Dean of admissions at GULC talks about the LSAT/GPA being the hurdle/bar that is placed before you to be admitted to law school. The height of the bar is dependent on your numbers, with the lowest hurdle set at a 180/4.33 The low hurdle means that your softs (resume, LORs, PS) only need to take you a tiny step over the hurdle. The worse the stats, the higher the hurdle rises, then your softs must get better and better in order for you to step or eventually leap over the hurdle.
