Should I put my LSAT score on the resume for the writers (econ and science professors) of my LORs? Or would including that be irrelevant info and would seem douchey?

I wouldn't. Lors are suppose to be about you and the person you are, work ethic, blah blah blah. Not your score. You aren't your lsat score, no matter what anyone tells you.
