I've never heard of someone doing this, but I can't imagine it would be a problem. You might have to assign it to just one of them for LSAC purposes but I have no idea why it would be a problem if they both signed the actual letter.
In all honesty, especially if its not a LOR from professors, it wont matter anyway you do it. The letter will have the same impact on your cycle if it is signed by one of them or both of them.
