I'm taking my easiest classes of UG next year, my senior year. I know law schools will see my first semester grades, but will they base their decision off of my second semester grades too? That would be super convenient since my 4 easiest classes will be senior year 2nd semester.

If it noticeably increases your GPA, you may consider applying a year later to take full advantage of a higher GPA (most likely it won't have a big enough impact in itself, but if you had say 3.2-3.3 average and then got 4.0 both semesters senior year, your graduating gpa would be noticeably higher).
