How does the letters of rec process work? Get them from who? Forum

I'm going to be technically graduating this summer after I complete a left over course at a local community college. I'm going to be applying this fall to California based law schools. My main goal is to get into Pepperdine. I plan on getting a letter of recommendation from the CC Honors Program director, two UCSD professors, and a UCSB professor (if he is nice). What should I ask them to write about me. Is there anything specific that I should have them include? Can I collect the recommendations now and submit them when I apply? Do I need to collect multiple letters of recommendation if I plan on applying to multiple schools? Do they need to be confidential? Thanks.
