Do you put summer school/e-learning course into your resume?
And if yes, where to put them? Should they be under "Education" or "Extracurricular Activities"?

What kind of course was it? I would say that if it was directly related to your UG studies (a certification or continuing education), then put it under education. If it is anything else, put it under extracurriculars.

I wouldn't add it unless it was a certification for something. Don't add random undergrad courses that you took.
Put it under education.
