what can be good DS topic?
Would writing about having an undergrad degree in engineering and extensive research experience be a legit DS?

That's a little cold.
I think it *could* work, but you would have to craft it very, very carefully. It's definitely a non-traditional topic, as obviously most diversity statements are written based on race/socio-economic status/sexuality, etc... that is to say, things that cannot be changed/chosen (or at least not as easily as your major/field of interest).
On the other hand, though, if done properly, I think you could argue that you will bring a unique perspective. And ultimately, I think bringing diversity by way of carefully made decisions and life choices can be more valuable than simply playing the hand you were dealt. Also, from my perspective, ignoring the diversity statement option is conceding that because you're white/middle-class (etc), you bring nothing in terms of diversity -- or worse yet, that you didn't have the time/energy/desire to processing just what your contribution might be.
...basically, if you think you can do it well, then I say do it.

that topic feels like a stretch, and i dont think you ever should 'stretch' to write a DS
