I'm coming straight out of undergrad and I'm fairly sure I'll be considered "independent".
That said, some schools do want parental information, but it seems like they have separate forms for that. Does that mean for the FAFSA I'm okay just leaving out their income info?
Also, I don't know what schools I've been admitted to yet, so which schools should I be sending my FAFSA info to? (They give you an option to list schools) All of the ones I applied to? Or just the one's I've been accepted to?

You will be considered independent but most schools still request you include your parental info.
Since most schools (except a handful like HYS) don't give need based aid, it won't matter. All FAFSA gives you is loan money which won't be affected by your parents info.
