I think that if you really like living in Florida it can be a great place to pursue a legal career. It is a rather populous state with no "top" law schools, meaning that presumably you can get a pretty good job going to one of the T2 in-state schools (UF, FSU, Miami). Most other highly populated states have T14 schools or at least top-30.

Take classes you can get A's in during community college. This is all.

As Halibut mentioned, there really aren't any specific courses that you should be taking in college that would prepare you better than others. Your GPA is an important factor, and the difficulty/focus of classes that you've taken is a secondary concern as far as law school admissions are concerned. Generally speaking, you should take classes that you find interesting, as you are more likely to enjoy them and thus be motivated to do better. Some background in research, writing, analytic reasoning, and argumentation might come in handy for the LSAT and law school, but it's certainly not necessary. I think you'll find that a sizable portion of many law school cohorts have degrees in the natural sciences or other fields not necessarily related to the humanities or social sciences. There truly is no hard-and-fast rule with regard to what courses you ought to take.
