Etiquette after Deciding
Is there any proper etiquette that you should inform schools where you won't be attending? Let's say you are ready to put down the deposit and you negotiated successfully to a point that meets your acceptable level of potential debt meaning your decision is made. Do you inform other schools so they can free up money/spots? Do you just ghost them until their deposit deadlines come and go?

Definitely withdraw if you're 100 percent sure. It's just good manners, I think, and as you said, frees up money and spots.
